Ham Hocks and beans

   Ok guys, we here at the clipper  kitchen want to know

   I", have always put two onions cut up with four am hocks and half lbs of bacon

   and  two cloves of Garlic  in with my beans...  How do you intend

   to do yours????????

I cut up a whole ham. Not that crap ham you get from the grocery store either. (We raise and butcher our own pork.) Put in some chopped celery. diced onion. then maybe a 2 ham hocks. I like alot of meat in mine.

No Ham/beans recipe here - but - we do lots of different "Clipper" food - and this one is becoming a favorite - especially for the first night upon arrival (because it's easy).

8 inch french rolls (soft)
thinly sliced roast beef (Evergood)
pepper jack cheese
thin sliced red onions
chopped jalapenos (the ones in a jar - Costco)
Mazzeti's barbeque sauce (or your favorite)

Open the roll, put on the cheese, then the roast beef (4-6 oz), then the sauce, then the onions and jalapenos, then another layer of cheese, close up the roll. Wrap the whole thing in foil, then wrap it again in cellophane, put it in the fridge.

Upon arrival at your campground, or whenever you're ready for dinner - remove the cellophane (but leave it in the foil), put it in the Clipper oven for 15-20 minutes at 300 or so.
Serve with tomato soup and a good beer.

Fish heads and rice?  I learned that one during my 8 years in the Philippines!! :-)  Seriously, give me a few and I'll see what I can come up with.  However, the wonderful woman I'm married to used to own her own resturaunt and specialized in Mexican food... so I am forced to eat some of the best "poor peoples food" on the planet!  She only closed her resturaunt down when it was interfering with raising her 3 children and attending college in her spare time.

Boiled scrambled eggs.

go out and find the biggest pot you can find. I have a big aluminum pot that holds at least 4 gallons. Put it on the fire in the morning and get the water boiling. Its also a good way to warm up on chilly mornings. Have your wife, girlfriend, daughter, or who ever (you can do it your self if you absolutely have to)  mix up 5 or 6 eggs in a bowl then pour into a zip lock baggy. I used the double zip ziplocks. then throw it in the boiling water. after a couple minutes the baggy will get soft. You have to take it out and carefully using a plastic fork mash up the egg mixture in the baggy, reseal and throw back in the pot. You may have to do this 3 or 4 times depending how many eggs you put in per baggie. We went through 2 dozen eggs a day. My kids ate them up as fast as i could cook em. the best part is little to no clean up. If you serve on paper plates with plastic forks all you have to clean up is the bowl you used to mix the eggs in and the bacon pan. Makes very fluffy, tasty eggs.
